Coconut Mocha Cookies
Ingredients:
2 cups all-purpose flour
3/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup shredded coconut, plus more for sprinkling
1 tablespoon espresso powder
1 1/4 (2 sticks plus 4 tablespoons) butter, room temperature
2 cups sugar
2 large eggs
2 teaspoons vanilla extract
Directions:
1. Mix together flour, cocoa powder, baking soda, salt, coconut, and espresso powder. Set aside.
2. In the bowl of an electric mixer beat butter, sugar, and eggs on medium speed until light and fluffy, about 2 minutes. Add vanilla, and mix until combined. Gradually add flour mixture and combine on low speed.
3. Heat oven to 350 degrees. Line baking sheets with parchment paper. Roll dough into 1-inch balls (or larger for bigger cookies). Place on prepared baking sheets about 1 1/2 inches apart. Slightly press down balls and sprinkle with coconut. Bake until set, 8-12 minutes. Transfer baking sheets to a rack to cool. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool.
