Trust and Obey

Trust and Obey

Since I like to take nature photos I would more than likely use some of them if I were going to make cards. I can see having a Four Seasons set and featuring one photo from each season.

Happy Spring!

Spring!





The time of year when you can wear short sleeves and jeans. Flipflops and jackets. When the air has that smell and you can keep the windows open and taking walks is enjoyable since you don't freeze but you don't have to worry about snakes (~~shudder~~). Flowers are starting to bloom and trees are starting to bud. The grass starts turning green again and the evenings are longer.

Project Pinterest: Pineapple Whips

When I saw this pin on Pinterest I knew I had to make it. It looked so good and refreshing.


Tuesday was the day! It was a warm day and all the ingredients were on hand.

Pineapple Whips
*the original recipe can be found here. The recipe below is with my few adaptions.

40 ounces crushed pineapple with juice
3 tablespoons lemon juice
1/3 cup sugar
1 and 1/2 cups heavy whipping cream, whipped

Drain pineapple; reserve 5-6 tablespoons juice. Set aside. Place pineapple, lemon juice, sugar and 3 tablespoons pineapple juice in blender and blend until smooth. Pour into two 1-quart freezer zipped bags and store bags flat in freezer. Freeze 1-1/2 hours. Stir pineapple slush gently into whipped cream in large bowl. Return to freezer until completely frozen, about 1 hour (I had mine in for 3 hours and it was still a good consistency). Just before serving, whip some more heavy cream with the rest of the reserved pineapple juice. Top each serving of the whip with a dollop of whipped cream.  

They were delicious!

This photo was taken at Crater Lake when I visited the amazing National Park in the summer of 2010. At night we would make our coffee over the campfire and play games by lantern light.

Here We Go A-Rambling

Brian, Kristin, and the kids welcomed a new family member the other week, Finn. I now have a new "nephew". On Sunday we went over to their house for dinner and to meet Finn. He is the cutest puppy!

Yesterday was Leap Day. My Mommom's 21st birthday. I figured up that next Leap Year, Mommom and I will both turn 22. That is kind of cool to be able to say that I am the same age as my grandmother. We had a party for her on Saturday.

It's in the 60's here today and it's March 1st. I'm not complaining or anything because I love warm weather. It's just...different. I thought March was supposed to come in like a lion. I guess the lamb decided to take the lion's place.

Did you know it is National Peanut Butter Lovers Day? Neither did I until this afternoon. I think there must be a day for everything out there. My lands! So go eat some peanut butter and know that you are doing it in honor of this very important day (that you probably didn't even know about until you read this). I guess I did my part this morning by eating peanut butter on my mini bagel. I usually eat a mini bagel with peanut butter and nutella but since we ran out of it yesterday I had it with just peanut butter. Do you prefer crunchy or smooth or do you not eat it at all?

And now we come to the coffee drink saga. Today was a coffee kind of day. Some days are like that. We get out our recipe book with the recipe for copycat Starbucks Fraps. We mix the ingredients in the blender all the while getting more and more excited for our drinks. We put it in glasses and add whipped cream and mini chocolate chips to garnish the tantalizing Java Chip Frappuccinos. We take pictures of it and then go to dig into our lovely looking drinks. Ew...one sip and we couldn't even drink the rest. It was so sour. The milk? No. We, er Bekah (the only one who is brave enough to smell milk), smells the milk and it's fine. What could it be? We think we narrowed it down to the pectin (the secret ingredient). We had to throw it all out. But what were we going to go about coffee? I decided to whip up some iced coffee but instead of what I usually do (just add ice cubes) I put the coffee (Peets, we can't waste any of our Peets! J), some cream, chocolate syrup, and the ice into the blender. We came up with some good coffee that didn't taste sour. Thank goodness!
